Rack of lamb is not only delicious but also visually striking, making it an ideal choice for special occasions or when you simply want to “treat yo self!” The tender meat and flavorful herb crust, creates an irresistible combination that’s sure to impress.
Often considered a premium cut, rack of lamb typically commands a higher price than many other meats. On average, you can expect to pay around $15 to $30 per pound. In comparison, chicken averages around $3 to $6 per pound. However, this is where knowing some tricks of the trade comes in handy! You can actually find high quality, already “frenched” rack of lamb at Costco for an absolute steal of ~12.99/lb! They individually package each rack, making it the perfect purchase for a romantic dinner date at home without the need to buy several pounds of meat. Additionally, their lamb is sourced from Australia, which is known to have a less gamey taste/texture as opposed to American lamb.
What does frenched mean?
As seen above, and in the recipe, we want “frenched” racks of lamb for this recipe. This simply refers to trimming the excess meat and fat from between the rib bones. This creates a cleaner, more elegant presentation with each bone standing out independent from one another. “Frenching” is not only for aesthetic purposes but also helps the meat cook evenly and makes it easier to serve.
What Pairs Well with Rack of Lamb?
Rack of lamb pairs beautifully with a variety of sides and accompaniments. My personal favorites are roasted brussels sprouts and mashed potatoes. However, any roasted vegetables, potatoes, or greens are surefire ways to complete the meal. As for sauces, you can get fancy with a red wine reduction, or go with the classic (and my mother’s favorite): mint jelly!

Ingredients
1 rack of lamb (frenched)
1 head of garlic, peeled
1/4 cup olive oil
2 Tbsp rosemary
1 Tbsp thyme
Salt, to taste
Pepper, to taste
Directions
- Pat rack of lamb dry with paper towels, and ensure all excess fat/sinew has been removed from the bones.
- To a small food processor (or blender), add the garlic, olive oil, rosemary, thyme, and salt and pepper. Blend until smooth.
- Using a basting brush, coat the rack of lamb on both sides with the garlic rub. Flip the rack of lamb so the fat side is up, and allow it to rest for 1 h.
- While resting the rack of lamb, preheat the oven to 450°F.
- After the rack of lamb has rested for 1 h, bake in the preheated oven for 25 minutes (rotate the rack of lamb halfway through to ensure even cooking).
- Remove rack of lamb from the oven and stand upright (fat side down), and allow to rest for 15 minutes.
- Carve into individual ribs by slicing between each bone. Serve immediately.
